Gorgonzola Dolce


The Dolce is a higher moisture blue with less veining and a sweet, delicate flavor. Flavours are not very assertive but sweet, mild with notes of sour cream and lactic tang. It takes a minimum of 60 days ageing to let Gorgonzola demonstrate its unique characteristics.  1 pound and 2 pound pieces are available as preorder.  

Irish Cheddar


  Cow’s milk picks up a sunny pigment from the lush pastures growing in the fertile Catskill Mountains. Buttery and grassy, with sweet and fruity flavors, marinated briefly in Jameson Irish Whiskey and then kept moist while aging for 90 days with a coating of wax. 1 pound and 2 pound pieces are available as preorder. 



 This iconic Italian-style softie has assumed a defining role in the pungent washed rind family. Made with grass-fed milk from the Old Ford Farm in Upstate NY, one bite of the meaty, nutty, fruity interior and you'll understand its millennial appeal. The squares of cow's milk are washed with a brine to foster a sticky, orange edible rind while air pumped from the original caves causes a dappling of soft and earthy tasting grey mold .  1 pound and 2 pound pieces are available as preorder.  

Saint Marcellin


 Saint-Marcelin is a soft unpasteurised, mold ripened cheese that was made exclusively from goat's milk until the 13th century. Today, cow’s milk is used to make this small round, wrinkly cheese dusted with a coating of white yeast. The texture of the young cheese varies from firm to very runny and it has a mild, slightly salty flavour. When ripe, it is irresistible with slightly yeasty taste. It typically has a beige crust with a soft, creamy interior. It has an intensely rustic, nutty, fruity flavour. 3 ounce rounds are available as preorder.   

Mont d'Or


 Called “the holy grail of raw milk cheeses”, Mont d’Or is truly a spectacular cheese.  

The cheese is always presented in a wooden box and bound with spruce hoops. These should never be removed, even when serving, as they enable the cheese to be contained. It is sheer delight to the palate ... a taste that lingers, a taste one never forgets....velvety and buttery.

The surface of the cheese is moist, with a rind that is golden and slightly reddish. The pate is a soft yellow and creamy. A cheese to be eaten with a small spoon. 4  ounce rounds are available as preorder.
